Restaurant Makarun

IN THE MIDDLE OF DIOCLETIAN’S TOWN (AT THE JUNCTION OF THE TWO MOST FAMOUS CITY SQUARES – NARODNI AND VOĆNI), HIDDEN FROM THE VIEW, WITH A FIG TREE AT THE ENTRANCE, LIES A RESTAURANT CO-OWNED BY JURICA FARAC AND MARKO TERZIĆ. THE RESTAURANT HAS BEEN OPEN FOR TEN YEARS AND HAS ACQUIRED THE STATUS OF ONE OF THE BEST SPLIT ADDRESSES FOR GOURMETS.

Their signature dishes are based on macaroni which they make every day according to the family recipe from Korčula. Macaroni is served in fish or meat sauce. The menu also boasts fresh fish from the nets of local fishermen while lobsters can be seen in the aquarium. Meat is procured from proven farms; in fact, the entire animal is delivered and then cut up, while some parts are set aside for ageing.

They are particularly proud of the vegetables grown in their own garden in Meje, so chef Ivica Radić prepares seasonal dishes that make guests flock to this restaurant. The restaurant is surrounded by old town houses, and one of them is their small hotel. The terrace above the restaurant is dominated by a large chef’s table.

Ingredient traceability is excellent, as many ingredients are sourced from in-house cultivation or long-standing, trusted domestic suppliers. All other evaluation criteria are of a high standard, especially the exceptionally knowledgeable and friendly staff.

THE EXQUISITE CERTIFICATE

THE EXQUISITE CERTIFICATE IS A MARK OF DISTINCTION, RECOGNIZING THE SUPERIOR QUALITY AND STANDARDS OF YOUR HOTEL OR RESTAURANT.

The Exquisite Certificate is awarded after three inspection processes conducted by a panel of distinguished experts in the gastronomy and hospitality sector.

The first process involves thorough hygiene control and management within the facility, followed by detailed supervision in the food processing department.

The second process of control focuses on top-level safety both inside and outside the facility itself. It includes a thorough inspection of hygiene conditions within the facility, as well as control of the processes of receiving, storing, and processing food.

The third process refers to food preparation, serving, and the organoleptic characteristics of the food, as well as the final procedure of evaluating the overall hospitality service.

A prerequisite for conducting these three inspection processes includes ensuring top-level safety both inside and around the facility.
