ALTHOUGH IT WAS OPENED ONLY A YEAR AGO, THIS RESTAURANT IMMEDIATELY ESTABLISHED ITSELF AS AN IMPORTANT PLACE ON THE SPLIT RESTAURANT SCENE. THIS SMALL RESTAURANT IS TRENDY, BUT NOT OBTRUSIVE. THE TWO LEVELS OF THE RESTAURANT, AS WELL AS A GALLERY FOR MORE INTIMATE APERITIFS OR DIGESTIFS, CONTRIBUTE TO THE PLEASANT AMBIENCE.
The kitchen is “open”, therefore exposed to the view of curious guests. This always deserves great praise because the message of open kitchens is straightforward: we do not hide what we cook and how we cook. Moreover, open kitchens are characteristic of almost all the most prestigious restaurants around the world.
The imaginative description of the dishes on the menu says a lot about this place: “Believe us” for the most creative dishes which are less common on the menus of other restaurants or “Feel like a local with a twist” for traditional Dalmatian dishes with a twist, to name just two examples among a dozen similar ones. These imaginative names hide cod and Skradin risotto; both delicious authors’ recreations of traditional recipes.
As a matter of fact, all the dishes here are the result of deep reflection of culinary heritage and its reinterpretation in the hands of a creative chef. Young chef Ivan Temšić has already interned in several prestigious restaurants. Two years ago, he proved his talent and ambition when he won the most famous and demanding national culinary show – MasterChef Croatia. His passion for cooking is so great that he opened his own restaurant with all the money earned from that television award.
TECHNICAL INSPECTION
Systematic education and practice are also reflected in food selection, food processing and decoration of dishes where high quality standards are respected. The kitchen equipment with adequate traceability is at a very good level. Team training sessions are organised regularly with the purpose of creating an excellent offer of visually attractive dishes made of regional and indigenous products.
